Samsung Welstory announced on December 11 that it has developed and is expanding the adoption of an 'Automatic Salinity and Temperature Measurement System' (hereafter referred to as the automatic salinity meter), which automatically measures and informs customers in real time of the salinity and temperature of soups and stews served in company cafeterias.


As awareness continues to grow that excessive sodium intake is harmful to health, managing the salinity of soups and stews has become a key competitive factor in food service menus. However, maintaining consistent salinity throughout long meal service hours has been a significant challenge. Even if food is prepared according to set salinity standards, reheating can make the broth saltier, while leaving it to sit can cause it to cool. This has created a need for real-time salinity and temperature measurement. However, existing salinity meters require the broth to be cooled to 40-60°C before measurement, making it virtually impossible to monitor salinity during meal service.

To address this issue, Samsung Welstory has collaborated with a specialized measuring instrument company to develop an automatic salinity meter that can measure salinity and temperature in real time during meal service, without having to cool the broth.


The automatic salinity meter is installed on the serving cart containing the soup, where a high-performance sensor measures salinity and temperature every 10 seconds. Based on the management standards for each menu, the display at the serving station shows information such as 'Optimal Salinity,' 'Low Salinity,' or 'High Salinity.' The device is also designed with adjustable width and length so it can be mounted on soup carts of various sizes, and its durability has been enhanced so that only the sensor needs to be replaced every 10 years, allowing for semi-permanent use.


With the introduction of the automatic salinity meter, Samsung Welstory can now monitor salinity and temperature in real time during meal service, enabling staff to add the appropriate amount of broth or adjust the heat as needed, thereby consistently providing menu items that meet the standard salinity and temperature requirements.


Samsung Welstory plans to further expand the adoption of the automatic salinity meter to more sites, as it has already proven effective at over 40 locations, with the goal of increasing customer satisfaction.


A Samsung Welstory representative stated, "With the automatic salinity meter, we have established a systematic foundation for providing customers with a healthy taste," adding, "We will continue to actively introduce various technologies necessary to deliver differentiated customer service."


Meanwhile, for the newly introduced automatic salinity meter, Samsung Welstory was responsible for developing the technology for real-time automatic measurement of salinity and temperature, while the manufacturing was handled by Daeyoon Instrument Industry, a specialized measuring instrument company. The product has also obtained four patents related to operation technology and design.
