View original imageFounded in Naples, Italy, in 1984, the AVPN (Associazione Verace Pizza Napoletana) is a nonprofit organization established to protect and preserve the traditions and quality standards of Neapolitan pizza. AVPN certification is awarded after a comprehensive review verifies that every stage of pizza-making, including the restaurant's oven, ingredients, dough-making techniques, shaping, and baking methods, fully complies with the traditional methods specified by the association.
Only 16 restaurants in South Korea have received AVPN certification, and Sangha Kitchen is the only certified restaurant in the Jeolla region. Sangha Kitchen fully met the association's standards, from building a traditional Neapolitan wood-fired oven to using locally sourced ingredients such as Italian flour, tomatoes, cheese, and basil, as well as applying skilled Neapolitan hand-shaping techniques and cooking temperatures. It passed both the document review and on-site inspection. An AVPN certification plaque is displayed at the restaurant, allowing visitors to verify its certification.
Following its AVPN certification, Sangha Kitchen plans to maintain the highest quality across its lineup of authentic wood-fired pizzas, including the Neapolitan classics Margherita and D.O.C., as well as Gorgonzola, Workshop Bratwurst, and Diavola pizzas. It also plans to continue introducing seasonal dishes made with fresh seasonal vegetables from Sangha Farm, sausages made in-house at its workshop, and premium Jin (眞) free-range eggs.

A representative of Sangha Kitchen said, "We will continue to draw on our pride as the only AVPN-certified restaurant in the Jeolla region to offer distinctive flavors created by combining fresh, healthy local ingredients with traditional Neapolitan pizza-making techniques, which are inscribed on UNESCO's Intangible Cultural Heritage list."
