Biocraft Launches Three Lager Yeast Strains, Expanding Options for Domestic Brewing Yeast
Biocraft Co., Ltd., a leading domestic yeast company, has unveiled three types of lager beer brewing yeast: 'BC71 Czech Lager Yeast,' 'BC72 Vienna Lager Yeast,' and 'BC73 American Lager Yeast.'
Biocraft continues its research and development efforts to reduce dependence on imported yeast in the domestic brewing industry and to develop a variety of locally produced brewing yeasts suitable for Korea's brewing environment.
Lager beer is brewed using a method that involves fermentation at lower temperatures over a relatively long period of time, making the characteristics of the yeast a crucial factor in the brewing process.
These three lager yeast strains were developed based on the characteristics of Czech, Vienna, and American lagers, respectively. With these releases, Biocraft has expanded the range of domestic brewing yeast options and strengthened its product line, allowing brewers to choose yeast based on the desired flavor and fermentation characteristics.
In particular, the BC71 Czech Lager Yeast has demonstrated its potential through actual application in a domestic brewery's product. A representative from Brewery Eul stated, "By replacing the previously used yeast with BC71 Czech Lager Yeast, we were able to highlight the subtle sweetness and flavor of malt and Icheon rice, achieve a dry texture and smooth body, and deliver a clean taste."
A Biocraft representative added, "The launch of these three lager yeasts is significant in that it expands the environment for domestic brewers to choose from a variety of local yeast options rather than relying solely on imported yeast. Going forward, we will continue to broaden the scope of domestic brewing microorganism applications through research and development that takes into account the characteristics of the domestic brewing environment and raw materials."
